Roasted eggplant curry / brinjal roasted

Hii everyone..
How are you ? I hope you are keeping yourself safe .
Today  I am going to share with you brinjal or eggplant curry with a twist. Yes and the twist is eggplant or brinjal will be roasted.
So , the recipe would be simple and easy to follow 
Things we need
  • Eggplant or brinjal
  • Red rotten tomatoes
  • Onion
  • Garam masala
  • Oil
  • Salt
  • Dry coriander powder
  • Red chilli powder
Now will peel off the eggplant/brinjal and cut it into pieces in your desired shape. And put them on hot tava like this
When there colour start changing flip it to another side . It will turnout something like this roasted eggplant .
So tempting

Okay so we have the hero ingredient of the recipe.
Now you have to make gravy for it.
Just grind tomatoes make a paste out of it.
Put some oil into pan/ kadhai i would prefer iron pan it would enhance the flavour. Heat oil put cumin seeds and Hing powder into that and pour tomato pure into that . Now mix it with red chilli powder , salt ( according to your taste) , garam masala and mix it thoroughly. It will be turned out like this hot red gravy .
Isn't it mouthwatering.

our gravy is ready now put roasted eggplant into it and add little bit of water and mix all ingredients and our roasted eggplant curry is ready.
